Cook Rice according to package directions.
When rice is done place in small pot. Add Chopped Cilantro, lime juice, and veggie broth. Simmer.
Saute onion, bell pepper, and minced garlic for 5 min.
Rinse canned beans then add to onions and peppers. Simmer for 5 minutes.
Season to taste with onion powder, salt, and pepper.
Layer rice, beans, lettuce, tomato, salsa, and any other toppings for a filling meal.
