Fast pizza for the vegetarian or vegan. Super simple, totally satisfying. The toppings are of your choosing. Use the homemade spaghetti sauce found here.
Preheat oven or toaster oven to 400 degrees.
Slice pita through the side of edges, cutting all the way around to create two flat rounds from each pita.
Top with sauce and then all toppings, finishing with the vinaigrette and basil leaves.
Bake for 12-15 minutes. Toppings should look cooked and edges of pita should be crispy but not burned.
