Chipotle Style Bean and Rice Bowl

Filling comfort food, this meal hits the spot and sticks with you for a great meal. 

Servings: 3 people
Ingredients
  • 1 cup Dry Rice
  • .3 cup Bunch of Cilantro chopped
  • 1 cup Veggie Broth
  • 1 can Black or Pinto Beans
  • .5 Onion diced
  • .3 Green Bell Pepper dice
  • Minced Garlic
  • 3 tbsp Lime Juice
  • Onion Powder, Salt, and Pepper to Taste
  • Chopped Romaine Lettuce
  • Diced Tomato
  • Salsa
Instructions
  1. Cook Rice according to package directions.

  2. When rice is done place in small pot. Add Chopped Cilantro, lime juice, and veggie broth. Simmer.

  3. Saute onion, bell pepper, and minced garlic for 5 min.

  4. Rinse canned beans then add to onions and peppers. Simmer for 5 minutes.

  5. Season to taste with onion powder, salt, and pepper.

  6. Layer rice, beans, lettuce, tomato, salsa, and any other toppings for a filling meal.
