Growing up this meal was the quick, fresh, dinner that made everyone happy.

Servings: 3 people
Ingredients
  • 1 whole onion diced
  • 1 whole bell pepper diced
  • 1 tbsp minced garlic
  • 1 can black beans rinsed
  • .5 packet taco seasoning
  • 2 cups lettuce shredded
  • 1 cup tomato diced
Instructions
  1. Mix onions, bell peppers, garlic, black beans, ¼ c. water and taco seasoning.

  2. Simmer for 7-10 minutes.

  3. Place chips on plate and layer taco mix, tomatoes, lettuce, and any other toppings.

  4. Enjoy!
