Growing up this meal was the quick, fresh, dinner that made everyone happy.
Servings: 3 people
Ingredients
- 1 whole onion diced
- 1 whole bell pepper diced
- 1 tbsp minced garlic
- 1 can black beans rinsed
- .5 packet taco seasoning
- 2 cups lettuce shredded
- 1 cup tomato diced
Instructions

Mix onions, bell peppers, garlic, black beans, ¼ c. water and taco seasoning.

Simmer for 7-10 minutes.

Place chips on plate and layer taco mix, tomatoes, lettuce, and any other toppings.
