Vegan Egg Roll in a Bowl

This meal started out as a search through my fridge. As much as I want to be organized and proactive, it just didn’t happen this week. The resulting meal came together from odds and ends, tasting great for dinner and just as good for lunch the next day. This pairs great with a warmed pita loaf.
Ingredients
- 6-7 baby carrots shredded
- 3 green onion sliced
- .75-1 head of cabbage small
- 1 can black beans rinsed
- 1 tsp powdered ginger
- .5 cup soy sauce low sodium
- 1 sweet potato large
Instructions

Saute shredded carrots, the white ends of the green onions, and the cabbage with 2 tbsp water for 7-10 minutes

Peel and dice the sweet potato, then place in a microwave safe bowl with ¼ cup water and microwave for 7 minutes.

Add rinsed black beans, ginger, and soy sauce. Mix well.

Continue to simmer until heated thru.

Add microwaved sweet potato. Mix.
