This is my go-to meal when I want fast, fresh, and filling. It is great for feeding guests, especially if there are a lot of them.
Ingredients
- 1 onion diced
- 1 bell pepper diced
- 1 tbsp minced garlic
- 1 can black beans rinsed
- 1 pkg milk-free taco seasoning mix
- flour or corn tortillas
- toppings of your choice
Instructions

Saute onions, pepper, and garlic with ¼ c. water for 5-7 minutes.

Add Black beans and seasoning. Simmer 4-5 minutes.

Heat tortillas and top with taco beans and your choice of toppings.
