Lemon Basil Mushroom Penne

A fast, filling, simple meal is exactly what I crave after work on a Monday night. This meal is super easy and a simple pleasure.
Servings: 3 people
Ingredients
- penne pasta
- 8 oz whole baby bella mushrooms
- 1 tbsp minced garlic
- 2 tbsp vegan butter or olive oil
- .5 cups chopped fresh basil
- 3 tbsp lime juice
- salt and pepper to taste
Instructions

Start water to boil for pasta.

Place cleaned whole baby bellas, garlic, and vegan butter in pan. Simmer on medium-low to medium for 15-20 minutes.

Cook pasta according to package directions.

Drain pasta.

Combine contents of mushroom pan, pasta, lime juice, and chopped basil. Mix.
