Black Beans

Servings: 4 people
Ingredients
  • .5 onion diced
  • 1 tsp minced garlic
  • .5 jalapeno finely chopped
  • .5 bunch cilantro removed stems, roughly chopped
  • 15 oz black beans drained and rinsed
  • .25 tsp better than bullion or other veggie broth concentrate
  • .25 cups water
  • 1 tsp cumin
  • 1 tsp chili powder
Instructions
  1. Cook onion, garlic, jalapenos in small to medium sized sauce pot for 5-7 minutes or until onions are translucent.

  2. Add Beans and continue to cook.

  3. Mix water and broth concentrate and add to pot.

  4. Add Cumin and Chili Powder. Mix.

  5. Remove from heat and use submersible blender or potato masher to partially puree the beans, leaving a chunky texture. Return to heat and keep warm until ready to serve.
