MONDAY
Cheesy Garlic Alfredo, Glazed Carrots
This is a slightly heartier take on the amazing cauliflower alfredo recipe from Oh She Glows. It pairs perfectly with glazed carrots, making a wonderful meal that reheats for great leftovers.
Notes: I did not use real butter, substituting vegan butter, which I simply melted and mixed with the honey and herbs. I also replaced half the honey with maple syrup. I also added a sprinkling of red pepper flakes, which gave a nice bite to the flavor.

Black Bean Tacos
This is my go-to meal when I want fast, fresh, and filling. It is great for feeding guests, especially if there are a lot of them.

WEDNESDAY
Pita Pizzas
I was in a hurry this Wednesday, like I am on many Wednesdays because I had to get home from work, will a dinner into existence, and then head for church. I end up with approximately 45 min- 1 hour to make and eat my food, so what did I make? Pita pizzas. Choose your own toppings to create your ideal pizza! If you want a bit more then throw together a light salad to compliment the pizza.

THURSDAY
Vegan Egg Roll in a Bowl… or a plate
This meal started out as a search through my fridge. As much as I want to be organized and proactive, it just didn’t happen this week. The resulting meal came together from odds and ends, tasting great for dinner and just as good for lunch the next day. This pairs great with a warmed pita loaf.

FRIDAY
Carrot Dogs, Onion Rings
I was craving junk food for dinner. This is pretty close in the flavor area but not in nutrition. It hit the spot, preventing a late night fast food (french fries) run. The carrot dogs worked great. My carrots were a bit thick so they needed longer to cook than the recipe recommended, but that gave time to batter my onion rings and get them baking.
Notes:
- Start the carrot dogs first. The longer they soak after boiling the more flavor the have. Be sure not to under cook them or the texture will be crunchy.
- The onion rings take a bit of time to batter as they are done in a 3 step process. The final texture is a bit chunky, not smooth like fast food store. If a flour mixture was substituted it might be smoother, but all in all, I enjoyed eating them, so it was a success.
