Simple Burritos

Once the rice is cooked these burritos go together fast. Top them with anything you like and save leftovers because they make great lunches!

Servings: 3 people
  • 2 cups rice cooked
  • 1 can black beans rinsed
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • .5 tsp salt
  • .5 tsp pepper
  • 1 tbsp lemon or lime juice
  • 5-6 soft tortillas medium or large
  1. Heat oven to 400 degrees

  2. Cook rice according to package directions.

  3. Combine all ingredients except tortillas, mix well.

  4. Scoop mixture into tortillas by ¼-½ cup full, wrapping tortillas into burrito shape. Place on pan or on tinfoil.

  5. Bake for 15-20 minutes to heat through and crisp tortilla.

  6. Top with your choice of toppings and enjoy!
