- 1 onion dice
- 3 carrots washed and diced
- 1 tbsp minced garlic
- 2 tbsp vegan butter
- 6-8 oz egg noodle
- .5 packet sloppy joe mix
- 1 can crushed tomatoes
Sauté onion, garlic, and carrot in the vegan butter for 5-7 minutes or until carrots are soft.
Boil Egg noodles according to package directions.
Combine cooked egg noodles, sauted veggies, sloppy joe mix, and crushed tomatoes. Mix well.
Simmer for 5-10 minutes to allow flavors to mix.
Dice Onion and carrots small so they cook faster. Start salad once veggies and noodles are cooking.
